Ingredients
- 3 cups cooked couscous
- 2 cans chickpeas, drained and rinsed
- 1 rotisserie chicken, breasts shredded
- 1 bunch flat leaf parsley, chopped
- 1-2 bunches cilantro, chopped
- 6oz crumbled feta
- 1 large red onion, diced
- 4 cups arugala
- 8oz jar sun dried tomatoes, drained of oil
- 1/3 - 1/2 cup fresh lemon juice
- 1/2 cup olive oil
- minced garlic
- 1 tsp cumin
- 1 Tablespoon honey, plus more to taste
- Salt and Pepper to taste
Directions
Combine all ingredients couscous through sun dried tomatoes. Whilk together the lemon juice, olive oil, garlic, cumin and honey. Combine to taste, and enjoy!
